1 box of fresh Square Cheese Ravioli
6 oz. of thinly sliced sun dried tomatoes (drained of oil)
1/2 red onion thinly sliced
2 cups grape tomatoes, halved
1/3 cup of freshly chopped basil leaves
3 Tbs. balsamic vinegar
1/2 cup extra virgin olive oil
Freshly grated Parmigiano Reggiano cheese(optional)
Salt and fresh black pepper, to taste
Bring a pot of water to a rolling boil and add salt.
Carefully place the ravioli in the pot and cook for approximately six minutes and strain.
Next, place the ravioli in a pot of cold water and let sit for five minutes.
Drain the ravioli and then place in a serving bowl.
Add the sun dried tomatoes, red onion, grape tomatoes and 1/2 of the chopped basil.
Mix together the balsamic vinegar, extra virgin olive oil, and salt and pepper. Pour over the ravioli and ingredients and gently toss together.
Refrigerate to make the ravioli extra cold or serve immediately.
