Recipe - Shrimp Ravioli Teriyaki

1 box of Large Round Shrimp Ravioli
1/2 cup of pure olive oil for frying ravioli (plus 2 Tbs.)
4 cloves of minced garlic
1 Small Red Bell Pepper Diced
1 Small Green Bell Pepper Diced
1 cup Teriyaki Sauce
2 Tbs fresh chopped scallion
1 Tbs fresh ginger root
Salt and fresh black pepper, to taste
In a large pot, add salt to boiling water. Gently place ravioli into pot. Cook no longer than five minutes. Once in the pot, the water will temporarily cease boiling. After a minute or so, the water should come back to a boil. At that point, lower the gas on the stove so that the ravioli are cooking at a medium flame. If using a straining spoon, it is a good idea to begin removing the ravioli at or around the 4 minute marker, since it will take around 1 minute to remove all of the ravioli from the pot. If using a standard strainer, however, gently pour the ravioli out of the pot after five minutes.
Let the ravioli dry after draining off the water.
Place 1/2 cup of extra-virgin olive oil into a sauté pan over a medium-high flame.
Once the oil is hot, add the ravioli and fry until golden brown. Set aside.
Next, sauté the minced garlic and bell peppers in a fresh pan lightly coated with remaining olive oil.
Cook the peppers and garlic for 3-4 minutes or until soft.
Add the teriyaki to the pan.
Once the sauce is warmed through, add the fried shrimp ravioli to the pan.
Let this simmer for approximately five minutes. Remove from heat and place the ravioli on a platter. Drizzle the remaining teriyaki mixture over top and garnish with scallions & ginger root. Enjoy!
