Summer Ravioli Salad
Our fresh ravioli salad is a popular seasonal recipe perfect for a quick snack, a light lunch, or when served as a side dish at your next family BBQ.
Serving Suggestions: Serve cold or at room temperature. Substitute the Square Cheese Ravioli
with our Cheese or Tri- Color Tortellini to create another
delicious variety of this summer salad!
Ingredients:
- 1 box of fresh Square Cheese Ravioli
- 6 oz. of thinly sliced sun dried tomatoes (drained of oil)
- 1/2 red onion thinly sliced
- 2 cups grape tomatoes, halved
- 1/3 cup of freshly chopped basil leaves
- 3 Tbs. balsamic vinegar
- 1/2 cup extra virgin olive oil
- Freshly grated Parmigiano Reggiano cheese(optional)
- Salt and fresh black pepper, to taste
Directions:
- Bring a pot of water to a rolling boil and add salt.
- Carefully place the ravioli in the pot and cook for approximately six minutes and strain.
- Next, place the ravioli in a pot of cold water and let sit for five minutes.
- Drain the ravioli and then place in a serving bowl.
- Add the sun dried tomatoes, red onion, grape tomatoes and 1/2 of the chopped basil.
- Mix together the balsamic vinegar, extra virgin olive oil, and salt and pepper. Pour over the ravioli and ingredients and gently toss together.
- Refrigerate to make the ravioli extra cold or serve immediately.
- Right before serving, add the remaining fresh basil to the top of the salad along with the grated Parmigiano Reggiano .
- Enjoy!
