Linguine with Extra-Virgin Olive Oil and Garlic
Our fresh linguine is one of our most popular pasta cuts due to its delicious flavor and versatility.
Whether you top it with our signature home-made Marinara Sauce, prepare it with fresh clams or serve it
with oil and garlic, this pasta is sure to satisfy.
This recipe is perfect for a no fuss, home-cooked meal that requires little energy and clean up.
Ingredients:
- 1 lb. fresh Linguine pasta
- 1/2 cup extra-virgin olive oil
- 5 cloves of thinly sliced garlic
- 1 Tsp. red pepper flakes
- 1/2 cup finely chopped fresh flat-leaf parsley (plus 2 Tbs.)
- 1/2 cup freshly grated Parmigiano Reggiano cheese
- Salt and fresh black pepper, to taste
Directions:
- Bring a pot of water to a rolling boil and add salt. Carefully place the linguine in the pot and cook al dente,
approximately 6-8 minutes (see instructions on container ). Always stir fresh pasta with a wooden spoon.
- While the pasta is cooking, place 1/2 cup of extra-virgin olive oil into the sauté pan over a medium-high flame.
- Once the oil is hot, add the garlic and red pepper. Sauté until lightly golden.
- Next, quickly add the parsley; stir and remove sauté pan from the heat.
- Add 1/2 cup of cooked pasta water and stir, to create a smooth sauce.
- Strain the linguine and place it in a warm serving bowl.
- Gently pour the olive oil and garlic mixture over the pasta and top with the Parmigiano Reggiano grated cheese.
- Be sure to bring the extra two tablespoons of chopped parsley to pass at the table along with fresh ground black pepper.
